Sieve flour, white sugar and salt and add butter to make rough dough. Take a 9 inch pan and grease it. Now press the dough hard on the bottom of the pan. Bake for 15 minutes at 350 degree till the pastry becomes slight brown. In another bowl make a mixture of brown sugar, eggs, grated coconut, nuts and vanilla essence. Pour this over the half baked pastry. Bake it once again for half an hour till the topping becomes tough. Coo the pastry for about fifteen minutes.
Useful tip: Always pack brown sugar tight while measuring as tend to have lot of air. When tightly pressed the air is released and can give the correct measurement. Always use a knife to sweep the top of the measuring cup with brown sugar to level it.
2 cup sifted confectioners’ sugar
2 tbsp. lemon juice
1 tsp. grated lemon rind
To make the glaze mix all the ingredients together to forma smooth paste and spread it evenly over the baked pastry.

2 cups flour
1 tsp. salt
2/3 cup shortening
6 to 7 tbsp. cold water
1 1-lb. 5-oz. can apple pie filling
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. grated lemon rind
1 tbsp. lemon juice
1/3 cup sugar
1 3-oz. pkg. cream cheese
1/4 cup sour cream
Sift flour and salt in a mixing bowl and add shortening to make a fine mixture. Keep sprinkling water to the dough and mix with a fork to make fine dough. Make the dough into two halves. Roll the dough to a half inch thickness with smooth edges. Flatten the other portion into a circle 11/2 inches larger than a 9 inch pie pan. Place it loosely to the bottom of the pan. Mix pie filling and lemon rinds and pour it into the dough placed in the pan. Now mix the rest of the ingredients and beat it into a smooth mixture. Pout it over the apples. Now flatten the other portion of the dough and place it on the top of the pie. Make small cuts on the top for the steam to be released. Now sprinkle it with sugar. Bake the pie for 25-30 minutes at 425 degrees. Remove it from the pan and cool.
Useful tip: The pastry dough should be mixed lightly and the least to get a flaky crust. Use very little flour while flattening. Too much of flour will make the pastry tough. A little practice and concentration can help you to bake lovely pie crusts.

1 6-oz. pkg. semisweet chocolate bits
2 3-oz. pkg. cream cheese
3/4 cup sugar
1 tsp. vanilla

1 graham cracker pie crust
Take a pan and boil water. Take a smaller pan place it in the hot water and put chocolate in it and melt it. The water should not be very hot. Mix cream cheese well to make it soft. Add half cup sugar to the cheese. Then add salt. Add egg one by one and whisk them well. Ad melted chocolate and chill it. Beat it well into a smooth paste. A readymade graham cracker crust is good for the recipe but they are very to be made at home. Homemades tastes better then the readymade ones. You pie will look better in a real pie pan than in an aluminum pan.
Graham Cracker Pie Crust
1 1/4 cup graham cracker crumbs
5 tbsp butter
1/4 cup sugar
Ready made crumbs can be bought or these graham crackers can be put in a zip lock bag and be crushed. Microwave butter to melt and mix all the ingredients in a big bowl with the help of a fork. Well mixed but crumbly is ready to be put in a 9 inch pie pan. Press it well with your fingers. Chill the crust for at least 10 minutes and then add the filling.
