<p>Boxty is one among the many Irish recipes that uses potatoes very healthy.  This is a traditional potato pan cake. This can be made by grating 1 cup of raw potato that is squeezed, adding one cup of mashed potato, two cups of flour, about a tea spoon each of baking powder, salt and butter.  Kneed the mixture and divide in to flat cakes that can be baked or fried.  Unlike the harsh browns this has a much finer texture.   This like the other recipes is simple to make. My roots are from the South and I remember spending whole of my childhood there. The best memory of my childhood is of the long summer when all of us used to drink ice tea, shelling peas and butterbeans basking in the afternoon sun in our grandmother&#8217;s porch. I had to move on to a different part of the country and from then on my life changed except for the passion love for southern cooking and cuisine. </p>
<p>It was only during my teens that I understood that tea can be served in different ways other than being served with loads of sugar and ice. Around the same phase I saw that a few of the population ate vegetables that were not soaked in batter, dredged in cornmeal or fried fat deeply. At times I do fell that the southern cooking I have tasted through out my childhood is one of the best I have had till date for no other recipe or cuisine can never replace it. </p>
<p>Did you know that most of the southern population knew the technique to do in little quantities but many a times in a day? The main reason for this is that most of the people living in South America are victims of poverty but even amidst the scarcity they are munificent. It is the same case with food too. Food is one of the items that is in adequate quantity available in the south. The people living in the south have many traditions of which the most popular is to feed the guests a hearty and satisfactory meal. </p>
<p>Probably the magic is all done by the seasonings made use in southern cooking. <p>For the crust:<br />Sifted flour (all-purpose) 1 cup <br />Baking powder  teaspoon <br />Butter 1 teaspoon and 5 tablespoons<br />Sugar (granulated)  cup <br />Egg (large and separated) 1 number<br />Milk 1 tablespoon <br />Ingredients for the filling:<br />Apricot preserves  cup <br />Almonds (blanched)  cup <br />Sugar (granulated) 2/3 cup <br />Salt  teaspoon <br />Egg (large) 1 number (reserve the egg white from the separated egg meant for crust)<br />Vanilla extract  teaspoon <br />Almond extract  teaspoon <br />Green food colouring<br />For the glaze:<br />Sifted powdered sugar  cup <br />Chocolate (unsweetened)  ounce <br />Butter 1 tablespoon <br />Vanilla extract  teaspoon <br />Boiling water 1 tablespoon </p>
<p><strong>Method of Preparation</strong></p>
<p><strong>For the crust</strong></p>
<p>Heat the oven and bring it to 375 F. Keep ready an 8&#215;8-inch baking pan greased. Take the flour and the baking powder, sift together and keep it aside. Take a small bowl with an electric mixer and beat butter until creamy. </p>
<p>Now add sugar to the butter and continue to beat until mixture is light and fluffy. Add milk and egg yolk and beat well. Now add the flour mixture gradually and stir well. </p>
<p>Leave the flour mixture pressed into the bottom of the pan itself and bake for 12 to 15 minutes or until the edges begin to turn golden brown in colour.</p>
<p><strong>For the filling</strong></p>
<p>Meanwhile, for making the filling, soften the preserves by stirring in a small bowl. Powder the almonds to a fine state in a food processor. Add this powdered almonds, sugar and salt to a bowl and stir well.  Add the egg and egg white, vanilla, almond extract, and 2 or 3 drops of food coloring. </p>
<p>Blend well and mix thoroughly. Now spread the preserves in a thin layer over the hot crust duly leaving a 1/2-inch border. </p>
<p>Spread the prepared almond filling evenly over the preserves. Bake again for 25 minutes or until the top barely springs back when pressed lightly with a fingertip. Allow to cool completely.</p>

<p><strong>Party Sangria</strong></p>

<p>Basically Sangria recipe has one bottle of red wine or a bottle of white zinfandel, mixed with the juice of two lemons and two limes, two to four table spoons of sugar and about three cups of soda water.  Mix all ingredients well and garnish with lemon peel strips. Serve over ice and make your guests enjoy.</p>

<p><strong>Method of Preparation</strong></p>
<p>Pre-heat the oven to 350F. Take a bowl and mix flour and salt evenly. Cut butter into pieces and add. Sprinkle with water and vanilla. Mix and blend well with a fork and make the dough. </p>
<p>Make two portions of the dough.  Take one portion at a time and roll into 1/16&#8243; thick on cloth-covered board. Sprinkle with sugar copiously.</p>
<p>Cut the rolled dough into 2  squares and fill the centre of each square with one teaspoon of fudge filling. </p>
<p>Fold corners and bring them to centre and seal together. Place the folded squares over an ungreased baking sheet with the sealed sides either facing up or down. Bake 15 to 20 minutes. </p>
<p><strong>Servings: 2  dozen</strong></p>
<p><strong>Fudge filling</strong></p>
<p>Take a bowl and add margarine (or butter), egg yolk, sugar, vanilla, cocoa and chopped nuts (r coconut flakes) and mix together well till you get a mixture of smooth and firm consistency.</p>

<p><strong>Method of Preparation</strong></p>
<p>Take butter, peanut butter and two kinds of sugar in a bowl and cream together. Add egg and vanilla extract and beat well. Add flour, salt and baking soda in a separate bowl and sift together.  </p>
<p>Add sifted flour mixture to the cream mixture and blend well to make dough. Heat the oven and bring it to 375F. Convert the dough into  inch balls and keep in ungreased 1- inch sized muffin tins. </p>
<p>Bake for 8-10 minutes or until light brown colour. Remove the cookies from the oven and immediately and press a miniature peanut butter cup into the center of each cookie so that only the top of the cup is seen outside. Allow to cool for 10 minutes before removing from tins.</p>
