Ingredients

Dates (chopped and pitted) 1 cup
Sugar (granulated) cup
Water cup
Margarine or butter (softened) cup
Packed brown sugar cup
Flour (all-purpose) 1 cups
Baking soda teaspoon
Oats (rolled) 1 cups
Salt teaspoon

Method of Preparation

Heat the oven and bring it to 350F. Mount a small saucepan over low heat and mix dates, sugar and 1/2 cup of water. Keep over heat for 15 minutes and stir occasionally till you get a smooth and thick mixture. In a separate bowl add brown sugar and butter and cream together.

Separately add flour, baking soda and salt in a bowl and mix well. Add this flour mixture to butter mixture prepared already and mix thoroughly. Now add the oatmeal and stir well. Add water and mix well to get dough. Make out the dough as a ball and keep in refrigerator for 15 minutes.

Roll out the dough to 1/8 inch thickness and cut 2 inches rounds. You can use scrap and piece dough again after pressing together.

Place half of the prepared rounds over an ungreased cookie sheet and put dates mixture at the centre of the round using spoon. Now cover the round with date mixture with another round and get the edged pressed firmly to avoid dates getting out of the rounds. Bake 15 minutes or till the cookies turn brown in colour.
