Softened butter 2/3 cup
Sugar (granulated) cup
Egg yolk 2 numbers
Extract of almond 1/2 teaspoon
Sifted flour (all-purpose) 1 cups
Salt teaspoon
Cherry flavoured red jam (or any flavour as per your liking)
Confectioners’ sugar

Method of Preparation

Heat the oven and bring it to 325 F. In a bowl add granulated sugar and butter and cream together. Add egg yolks and beat till the mixture becomes light. Add almond extract to the mixture and stir well. Separately sift salt and flour together and add this to the already creamed mixture and mix well.

Once the dough is made, shape the dough into 1 inch balls and place them over ungreased baking sheets with 2 inch spacing between balls. Make a shallow pressing or indentation on each ball using one of your fingers.

Bake for 25 minutes. After baking again press in at centers of balls. Transfer to wired rack and let cool. After cooling, fill indentation centers with jam and sprinkle with confectioner’s sugar liberally.

In case you use cherry jam, putting a cherry on each cookie ball will be a nice idea and this will enhance the taste further.
