Method of Preparation
Gently add sugar into margarine and beat together until it is creamy. Add egg yolk and vanilla extract. Mix well. Sift dry ingredients together and slowly add creamed mixture. Roll into small balls and place on an ungreased cookie sheet. Bake at 350 degrees for about 5 minutes. Remove from oven and then gently press maraschino cherry half or 1 gumdrop in the centre of each cookie. Again keep in oven and continue baking for an additional 8 to 10 minutes. Mouth watering maraschino cherry-gumdrop cookies are ready to taste. 2 cookies= 1 fruit exchange and 2 fat exchanges. Yields about 2 dozen cookies.
